How to Make Pemmican?
Pemmican recipe is relatively easy to prepare, and it is not stressful. If you have not prepared one before, we recommend starting with a smaller piece for practice, so you don’t waste your ingredients. You could start with 100 grams of recipes first.
Also, most of the ingredients you should use must be dry. So, we recommend using meat (beef) that has been dried for about 16 hours before you start. Generally, rendered fat is to be used since you are just learning to prepare one. If you are using an un-rendered fat, you will need to make it rendered by
- cooking at a super-low heat to draw out the liquid fat.
- Pour the liquid fat, which is called tallow, into a container and leave it at room temperature to turn solid.
Here are the ingredients required and follow the steps below to make Pemmican
- 300 Grams of Lean Beef
- 150 Grams Tallow
- 1 Teaspoon Salt
- Optional: Dried fruit such as dried blueberries
- Oven, and
- Cutting all the fat present in your meat

Step 1: Slicing
Slicing the meat into smaller pieces
Step 2: Salting
After slicing the meat, you need to add salt to the meat. This should be done generously
Step 3: Drying
Put your salted meat into the oven. Set to the lowest possible temperature. If you are adding fruits like berries, you need to dry them at this stage following the same process
- Wait patiently
- You should wait for about 15 hours to ensure that the meat is appropriately dried. After 15 hours, allow the meat to cool at room temperature and then weigh all of it.
- Heating the tallow
- Now heat your tallow in low heat. Use the same amount you weigh for your meat. You will need to do a rough estimation of the weight required to turn it into liquid
Step 4: Powdering
Crush the meat into a powdery form using your blender. You can use the mortar and pestle if you want to make it a little bit native. This process applies to the dried fruits also if you are adding it. Then mix the meat and fruit powder.
Step 5: Strain your tallow
This is done by pouring the powdered meat and dried fruit slowly. The meat should be packed down gently before you start. You can also use a baking dish by placing a layer of powdered meat on it, then wet it with tallow, put another layer of meat and then add more tallow.
Step 6: Cutting Pemmican into strips
At this point, the tallow should be hot when pouring over the meat. As it begins to cool, cut your Pemmican into strips or roll it into balls and store it in containers. You can add berries while cutting into strips or rolling it into balls depending on your preference
